Protein Oat Pancakes With Stewed Cinnamon Apples

I love this recipe because you just throw everything in a blender and can pour the batter straight to the griddle. They are hearty, warming, and a cozy treat with extra protein!

Makes 8 pancakes

Ingredients:
3 eggs
2/3 cup milk of choice (I used oat)
2 tbsp coconut sugar or pure maple syrup
1.4 tsp vanilla extract
2 cups rolled oats (I like One Degree sprouted oats)
2 tsp baking powder
1 tsp cinnamon
1-2 scoops plain or vanilla protein powder (I keep this one in stock for baking)
1-2tbsp avocado oil or ghee

For stewed apples:
1 sweet apple (I like pink lady), diced
Juice of 1 orange (or 1/4 cup orange juice)
1 tsp cinnamon

Additional toppings:
Toasted nuts
Maple syrup
Greek yogurt

Method:

1) Add the apples, orange juice, and cinnamon into a small sauce pan over medium heat.
2) Bring to a boil, then cover and reduce to a simmer for 5 minutes.
3) Uncover and let the apples simmer until they reach desired softness (I let it go for about 10-15 minutes until they are very soft).
4) Meanwhile, place all of the pancake batter ingredients into a blender. Blend on high until smooth.
5) Preheat a pan or griddle over medium heat. Once pre-heated, add the avocado oil or ghee.
6) Pour the pancake batter into 5 inch pancakes. Let them cook on each side for 2-3 minutes.
7) Serve with stewed apples and toasted nuts on top, and syrup on the side.
