Grain-Free Keto Granola
I love having this granola stocked up in the pantry. I like to eat it with some coconut milk or dairy-free yogurt, plus a handful of berries. This is a great replacement for cereals made from refined carbohydrates and sugars and kids love it!
Ingredients:
4 cups nuts (I like cashews, walnuts, almonds & pecans)
2 cups seeds (I like to do 1 cup pumpkin seeds, 1/2 cup sunflower seeds, 1/2 cup mix of small seeds like chia, sesame, hemp and flax seeds)
1 cup coconut flakes
1/4 cup coconut oil (You can also use avocado oil or light flavored olive oil)
1/4 cup maple syrup (You can use honey or keto maple syrup)
1 tsp vanilla
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cardamom
1/2 tsp salt
Optional: 3/4 cup dried fruit such as cherries, cranberries or raisins (add after baking or it will get hard.)
*COOK’S NOTES:
You can use 3 tsp of pumpkin pie spice if you have it. If you don’t have any of the spices, use 3 tsp of what you do have, using primarily cinnamon.
You can add whole oats to this recipe if you’d prefer to have some grains and more carbs. If you choose to include oats, do 3 cups nuts, 1 cup seeds and 2 cups oats.
Method:
Rough chop all the nuts into small pieces.
Mix together the nuts, seeds, and coconut flakes in a large bowl.
Melt the coconut oil, and mix together with maple syrup, vanilla, and spices.
Stir everything together until the nuts and seeds are well-coated.
Bake at 300 for 25-30 minutes, stirring every 10 minutes until the nuts and coconut are turning golden brown and are fragrant. (If you’re in a higher altitude such as Denver, you may need to increase your temperature to 350.)
Let cool, add the dried fruit, and store in a tupperware in a cool, dry place.
